Breaded Chicken
  • 2 boneless, skinless chicken breasts
  • 2 cups seasoned Parmesan breadcrumbs
  • 2 large eggs
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Method
 

Preparation
  1. Cut the chicken breasts evenly into thinner pieces, then pat them dry.
  2. In a shallow bowl, whisk together the eggs, kosher salt, and black pepper. Place the seasoned Parmesan breadcrumbs in a second shallow bowl.
  3. Coat each chicken piece in the egg mixture, then cover it thoroughly with the breadcrumbs, pressing gently so the coating adheres.
Air Frying
  1. Preheat the air fryer to 390°F (199°C), then lightly coat the basket with olive oil spray.
  2. Place the breaded chicken in the basket in a single, uncrowded layer. Air-fry for 6–7 minutes.
  3. Carefully turn each piece, apply another light coating of olive oil spray, and cook for 4–5 minutes more, until the chicken reaches an internal temperature of 165°F (74°C).
Serving
  1. Let the chicken rest for 5 minutes. Serve with lemon wedges, fresh parsley, shredded Parmesan, and optional red pepper flakes or hot sauce.

Notes

For the crispiest coating, slice the chicken into evenly sized pieces and leave enough space between them in the air fryer basket.
