  • 1 tablespoon olive oil
  • 1 pound (454 g) mild Italian sausage, casings removed if needed
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 2 medium carrots, sliced
  • 2 cups peeled and cubed butternut squash
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 9 oz (255 g) fresh or frozen cheese tortellini
  • 2 cups baby spinach
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • 1/4 cup grated Parmesan cheese, for serving

Method
 

Preparation
  1. Warm the olive oil in a large soup pot over medium heat.
  2. Add the Italian sausage and break it into crumbles as it cooks. Continue cooking until browned and the center reaches 160°F (71°C), then drain any excess grease if necessary.
  3. Stir in the onion, garlic, carrots, and butternut squash. Cook for about 5 minutes, stirring occasionally, until the vegetables begin to soften.
  4. Add the chicken broth and dried thyme, then bring the soup to a gentle boil.
  5. Lower the heat and maintain a gentle simmer for 15 minutes, or until the carrots and butternut squash are tender.
  6. Add the cheese tortellini and cook at a gentle simmer according to the package directions until tender.
  7. Mix in the baby spinach and cook for 1 to 2 minutes, until wilted.
  8. Season with salt and black pepper. Ladle the soup into bowls and finish each serving with grated Parmesan.

Notes

For meal preparation or freezing, keep the tortellini separate and add it during reheating so the pasta does not become too soft.
