Ingredients
  

  • 3 large overripe bananas (about 1½ cups mashed)
  • 2 cups old-fashioned rolled oats
  • ⅓ cup honey or pure maple syrup
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Heat the oven to 350°F / 175°C and prepare an 8×8-inch baking pan with parchment paper or a light coating of grease.
  2. Mash the bananas in a large bowl until mostly smooth, leaving only a few small pieces.
  3. Add the eggs, honey or pure maple syrup, and vanilla extract to the mashed bananas and whisk until evenly blended.
  4. Mix in the rolled oats and baking powder until the batter is combined.
  5. Stir in any optional mix-ins if desired, then spread the batter evenly into the prepared pan.
Baking
  1. Bake the bars for 25–30 minutes until the edges are lightly golden, the middle is mostly firm, and the surface is set while remaining soft.
  2. Allow the bars to cool for 10–15 minutes before slicing into 9 bars and serving.

Notes

Optional add-ins such as dark chocolate chips, chopped walnuts, pecans, cinnamon, chia seeds, peanut butter, or dried cranberries can be mixed into the batter before baking.
