Preparation
- Heat the oven to 350°F (175°C). Grease a muffin tin or prepare it with silicone liners.
- If using whole old fashioned oats, blend them into oat flour before preparing the batter.
- Mash the overripe bananas in a mixing bowl until mostly smooth.
- Mix the oat flour, baking powder, salt, vanilla extract, optional maple syrup, and optional water into the mashed bananas until evenly combined.
- Allow the batter to sit for 5 minutes so the oats can absorb the moisture.
- Gently mix in any optional additions, including blueberries, dark chocolate chips, chopped walnuts, cinnamon, nutmeg, chia seeds, or flaxseeds.
Baking
- Spoon the banana oatmeal batter evenly into the muffin cups.
- Bake for 16 to 22 minutes, until the tops are lightly golden and a toothpick inserted into the muffins comes out mostly clean with a few moist crumbs.
- Let the muffins cool for several minutes before taking them out of the muffin tin and serving.
Notes
Keep cooled muffins in an airtight container for up to 3 days at room temperature, up to 1 week in the refrigerator, or up to 3 months in the freezer.
