Preparation
- Cover a small tray or plate with parchment paper.
- Cut the ripe banana into thick rounds about 1/2 inch thick.
Assembly
- Melt the dark chocolate using short microwave intervals or a double boiler, stirring until fully smooth.
- Coat each banana round with melted chocolate and place the pieces on the lined tray.
- Add a drizzle of creamy peanut butter over the chocolate-covered banana slices, gently warming it first if needed to make it easier to spread.
- Sprinkle the chopped roasted peanuts and optional flaky sea salt over the bites while the chocolate coating remains soft.
Chilling
- Freeze the banana bites for at least 30 minutes, until firm, then serve directly from the freezer.
Notes
For the best texture, freeze the bites in a single layer first, then keep them in an airtight container with parchment placed between layers.
