Ingredients

Banana Bites
  • 1 large ripe banana
  • 1/4 cup dark chocolate
  • 2 tablespoons creamy peanut butter
Toppings
  • 2 tablespoons roasted peanuts, chopped
  • Flaky sea salt, optional

Method

Preparation
  1. Cover a small tray or plate with parchment paper.
  2. Cut the ripe banana into thick rounds about 1/2 inch thick.
Assembly
  1. Melt the dark chocolate using short microwave intervals or a double boiler, stirring until fully smooth.
  2. Coat each banana round with melted chocolate and place the pieces on the lined tray.
  3. Add a drizzle of creamy peanut butter over the chocolate-covered banana slices, gently warming it first if needed to make it easier to spread.
  4. Sprinkle the chopped roasted peanuts and optional flaky sea salt over the bites while the chocolate coating remains soft.
Chilling
  1. Freeze the banana bites for at least 30 minutes, until firm, then serve directly from the freezer.

Notes

For the best texture, freeze the bites in a single layer first, then keep them in an airtight container with parchment placed between layers.
