Ingredients
  

Meatloaf
  • 1 lb (450g) ground beef
  • 1 cup shredded cheddar cheese
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1/4 cup BBQ sauce
  • 1/2 cup breadcrumbs
  • 1 egg, beaten
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup milk
  • Salt, to taste
  • Black pepper, to taste
Topping
  • Extra BBQ sauce for brushing
  • Smoked paprika, optional

Method
 

Preparation
  1. Heat the oven to 375°F (190°C) and lightly coat a loaf pan or baking dish with grease.
  2. Place the ground beef, cheddar cheese, onion, garlic, breadcrumbs, egg, Worcestershire sauce, milk, BBQ sauce, salt, and black pepper in a large bowl.
  3. Mix the ingredients together gently until evenly incorporated, taking care not to overwork the meat mixture.
  4. Move the mixture into the prepared pan and form it into an even loaf shape without pressing it too firmly.
  5. Coat the top of the loaf with additional BBQ sauce and add smoked paprika if desired.
Baking
  1. Bake the meatloaf for 40 to 60 minutes, until the center reaches an internal temperature of 160°F (71°C).
  2. Allow the BBQ cheddar meatloaf to rest for 5 to 10 minutes before slicing and serving.

Notes

Use a meat thermometer to verify doneness and let the loaf rest before cutting to help create cleaner slices.
