Ingredients
  

Dry ingredients
  • 1/2 cup plain dried breadcrumbs
  • 2 teaspoons kosher salt
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon onion powder
Wet ingredients
  • 1/2 cup milk
  • 1 large egg, beaten
  • 1 tablespoon Worcestershire sauce
  • 1 1/2 teaspoons liquid smoke
Meat mixture
  • 2 pounds 80/20 ground beef
  • 1 small yellow onion, finely minced
Glaze
  • 2/3 cup thick sweet BBQ sauce, divided

Method
 

Preparation
  1. Heat the oven to 350°F / 175°C and prepare a rimmed baking sheet or loaf pan by lining it with foil or parchment.
  2. In a large bowl, stir together the breadcrumbs, kosher salt, chili powder, black pepper, cumin, garlic powder, and onion powder.
  3. Mix the milk, beaten egg, Worcestershire sauce, and liquid smoke into the breadcrumb mixture until combined.
  4. Add the ground beef and minced onion, then gently combine the mixture until the ingredients are evenly distributed while avoiding overmixing.
  5. Place the meat mixture in the prepared pan and form it into a loaf shape.
  6. Coat the top of the meatloaf with half of the BBQ sauce.
Baking
  1. Bake the meatloaf for 35 minutes.
  2. Take the meatloaf out of the oven and cover the top with the remaining BBQ sauce.
  3. Bake for an additional 25 minutes, until the internal temperature reaches 160°F / 71°C.
  4. Allow the meatloaf to rest for 15 minutes before slicing and serving.

Notes

Mix the meat gently and let the loaf rest after baking to help maintain the best texture.
