Preparation
- Heat the oven to 350°F / 175°C and prepare a rimmed baking sheet or loaf pan by lining it with foil or parchment.
- In a large bowl, stir together the breadcrumbs, kosher salt, chili powder, black pepper, cumin, garlic powder, and onion powder.
- Mix the milk, beaten egg, Worcestershire sauce, and liquid smoke into the breadcrumb mixture until combined.
- Add the ground beef and minced onion, then gently combine the mixture until the ingredients are evenly distributed while avoiding overmixing.
- Place the meat mixture in the prepared pan and form it into a loaf shape.
- Coat the top of the meatloaf with half of the BBQ sauce.
Baking
- Bake the meatloaf for 35 minutes.
- Take the meatloaf out of the oven and cover the top with the remaining BBQ sauce.
- Bake for an additional 25 minutes, until the internal temperature reaches 160°F / 71°C.
- Allow the meatloaf to rest for 15 minutes before slicing and serving.
