Chicken
  • 4 boneless, skinless chicken breasts
Marinade
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 teaspoon dried herbs such as thyme, rosemary, or oregano
  • Salt, to taste
  • Black pepper, to taste

Method
 

Preparation
  1. Combine olive oil, minced garlic, lemon juice, lemon zest, dried herbs, salt, and black pepper in a small bowl and whisk until blended.
  2. Arrange the chicken breasts in a single layer in a baking dish. Pour the marinade over the chicken and turn each piece to coat all sides evenly.
Baking
  1. Bake the marinated chicken breasts in a preheated oven at 375°F / 190°C for 20–25 minutes, until the internal temperature reaches 165°F / 74°C.
  2. Allow the chicken to rest for 5 minutes after removing it from the oven before slicing.
  3. Serve the sliced chicken with the lemon-herb juices spooned over the top.

Notes

For more pronounced flavor, marinate the chicken for at least 30 minutes before baking.
