Ingredients

Chicken
  • 1 pound boneless skinless chicken thighs or breasts, cut into bite-sized pieces
Sauce
  • 1/4 cup Bourbon whiskey
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1 tablespoon apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
Thickener
  • 1 tablespoon cornstarch
  • 2 tablespoons water
Garnish
  • Sesame seeds, for garnish
  • Green onions, for garnish
Cooking Oil
  • 2 tablespoons vegetable oil

Method

Preparation
  1. Pat the chicken pieces dry, then cut them into bite-sized portions.
  2. Combine Bourbon whiskey, soy sauce, brown sugar, apple cider vinegar, minced garlic, and grated ginger in a bowl to prepare the sauce mixture.
Cooking
  1. Warm vegetable oil in a skillet and brown the chicken pieces, working in batches if necessary to prevent overcrowding.
  2. Add the Bourbon sauce mixture to the browned chicken and simmer gently until the chicken is fully cooked and the flavors blend.
  3. Stir cornstarch and water together to make a slurry, then add it to the simmering sauce and cook until the glaze thickens and coats the chicken.
  4. Confirm that the chicken reaches an internal temperature of 165°F / 74°C before serving.
Serving
  1. Finish the Bourbon chicken with sesame seeds and green onions before serving.

Notes

Allow the sauce to reduce slightly after thickening so it creates a glossy coating on the chicken.
