  • 12 oz (340 g) pasta (penne or fettuccine)
Creamy Cajun Sausage Sauce
  • 1 lb (454 g) Cajun sausage, sliced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes
  • 1 cup heavy cream
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese

  • Fresh parsley for garnish

Method
 

Preparation
  1. Cook the pasta according to the package directions until al dente, set aside some pasta water, then drain the pasta.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add the sliced Cajun sausage and cook until browned with crisp edges.
Cooking
  1. Add the chopped onion, minced garlic, and chopped bell pepper to the skillet and cook until the vegetables are softened and fragrant.
  2. Stir in the diced tomatoes, heavy cream, and Cajun seasoning, then simmer the sauce gently for several minutes.
  3. Add the cooked pasta to the skillet and toss until the noodles are fully coated with the creamy sauce.
  4. Mix in the shredded cheese until melted and the sauce becomes smooth.
  5. Season the Cajun sausage pasta with salt and pepper to taste.
Serving
  1. Finish with fresh parsley and serve the Cajun sausage pasta warm.

Notes

Reserve some pasta water to thin the sauce if it becomes too thick.
