Ingredients

  • 2 large boneless skinless chicken breasts
  • 2 cups fresh green beans, trimmed
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/2 tsp cracked black pepper
  • 1 tbsp fresh lemon juice (optional)

Method

Preparation
  1. Blot the chicken breasts dry with a paper towel, then coat them with olive oil, garlic powder, sea salt, and cracked black pepper.
Cooking
  1. Warm a large heavy-duty skillet over medium-high heat and place the seasoned chicken breasts in the pan. Cook for 6–7 minutes without shifting them so the surface develops a golden brown sear.
  2. Turn the chicken breasts over and continue cooking for another 5 minutes until the opposite side is browned.
  3. Shift the chicken to one side of the skillet. Add the trimmed green beans to the open area and sauté, stirring occasionally, so they absorb the pan drippings.
  4. Keep cooking the chicken and green beans until the chicken reaches 165°F / 74°C internally and the green beans are bright green and tender.
  5. Add the fresh lemon juice over the chicken and green beans, take the skillet off the heat, and allow the chicken to rest for 3 minutes before slicing.

Notes

For the best browning, make sure the chicken is thoroughly dried before seasoning and avoid filling the skillet too closely.
