Preparation
- Pound the chicken breasts to an even thickness and season both sides with the salt and black pepper.
- Set out three shallow bowls. Add the flour to the first, the beaten eggs to the second, and the breadcrumbs to the third.
- Dredge each chicken breast in the flour, coat it in the beaten eggs, and press it into the breadcrumbs to cover evenly.
Cooking
- Heat the olive oil with 2 tablespoons of the butter in a large skillet over medium-high heat.
- Cook the breaded chicken for 3 to 4 minutes per side, until golden brown, then transfer it to a plate.
- Lower the heat to medium and melt the remaining butter in the skillet. Add the garlic and sauté until fragrant.
- Pour in the lemon juice and chicken stock, scraping the browned bits from the bottom of the skillet. Simmer for several minutes.
- Return the chicken to the skillet and spoon the garlic lemon butter sauce over each breast.
- Continue simmering until the chicken is fully cooked and its internal temperature reaches 165°F (74°C).
Serving
- Sprinkle with the chopped parsley and serve.
Notes
Pound the chicken breasts to a uniform thickness and cook them without crowding the skillet to help the breading stay crisp.
