Chicken Enchiladas with Enchilada Sauce and Cheese

Ingredients
  

Filling
  • 2 cups shredded cooked chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 1/2 cup diced onions (optional)
  • 1/2 cup black beans (optional)
Assembly
  • 8 small tortillas
Toppings
  • 1/4 cup fresh cilantro (optional)
  • Sour cream (optional topping)
  • Avocado (optional topping)
  • Jalapeños (optional topping)
  • Lime wedges (optional topping)

Method
 

Preparation
  1. Preheat the oven to 375°F / 190°C.
  2. Mix shredded cooked chicken with half of the enchilada sauce and half of the shredded cheese in a large bowl.
  3. Warm the tortillas until they are flexible and easy to roll without cracking.
Assembly
  1. Place the chicken mixture inside each tortilla, roll tightly, and arrange the filled tortillas seam-side down in a greased baking dish.
  2. Spread the remaining enchilada sauce over the rolled tortillas.
  3. Add the remaining shredded cheese evenly over the top of the enchiladas.
Baking
  1. Bake the enchiladas for 20 minutes until the sauce is bubbly and the cheese is lightly golden.
  2. Allow the baked enchiladas to rest for several minutes before serving.
Serving
  1. Top the enchiladas with fresh cilantro, sour cream, avocado, jalapeños, or lime wedges if desired.

Notes

Warm tortillas before rolling to help prevent cracking and make the enchiladas easier to assemble.
