Ingredients
  

Meatloaf
  • 1 lb (454 g) ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 egg
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
Topping
  • 1/2 cup marinara sauce
  • Crispy breadcrumbs for topping

Method
 

Preparation
  1. Heat the oven to 375°F / 190°C and lightly grease a loaf pan or prepare it with parchment paper.
  2. Place the ground chicken, breadcrumbs, Parmesan cheese, mozzarella cheese, egg, garlic, oregano, salt, and pepper in a large bowl.
  3. Gently mix the ingredients together until evenly incorporated, avoiding overmixing.
  4. Move the mixture into the prepared loaf pan and form it into an even loaf without compressing it too firmly.
Baking
  1. Spread the marinara sauce across the top of the meatloaf, then add the crispy breadcrumbs over the sauce.
  2. Bake for 45–50 minutes, until the center reaches 165°F / 74°C.
  3. Allow the meatloaf to rest for several minutes before slicing and serving warm.
