Preparation
- Heat the oven to 400°F / 200°C. Pat the chicken breasts dry, then season both sides with salt and black pepper.
- Arrange three shallow bowls with flour, beaten eggs, and Italian breadcrumbs to create the breading station.
- Coat each chicken breast in flour, then dip into the eggs, and finish by pressing into the breadcrumbs until evenly covered.
Cooking
- Warm the olive oil in a large skillet over medium-high heat. Fry the breaded chicken for about 4 minutes on each side until crisp and golden, then move it to a plate lined with paper towels.
- Transfer the fried chicken breasts to a baking dish. Add marinara sauce over the center of each piece, keeping the edges uncovered.
- Sprinkle mozzarella and Parmesan cheese over each chicken breast.
- Bake the chicken Parmesan for 15 to 20 minutes until the cheese is melted, bubbling, and lightly browned.
- Finish with fresh basil leaves before serving.
Notes
For a crispier coating, do not cover the entire chicken surface with marinara sauce before baking.
