- Melt the butter in a large soup pot over medium heat, then add the chopped onion, celery, and carrots and cook for 5–7 minutes until softened.
- Add the sliced mushrooms and minced garlic, stirring and cooking for 5 minutes until the mushrooms become tender.
- Sprinkle the flour over the vegetables and stir constantly for about 1 minute to create the roux.
- Gradually whisk in the chicken stock, then add the sliced potatoes, salt, and black pepper.
- Bring the soup to a gentle boil, lower the heat, and simmer for 12–15 minutes until the potatoes are tender when pierced with a fork.
- Add the shredded chicken, frozen peas, and frozen corn, then simmer for 5 minutes until warmed through; if using newly cooked chicken, ensure it reaches 165°F / 74°C.
- Stir in the heavy whipping cream and fresh parsley, then simmer for 1–2 minutes before serving.
