Ingredients
  

  • 1 pound boneless skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 8 cups chicken broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 package cheese tortellini
  • ¼ cup fresh parsley, chopped
  • Salt, to taste
  • Freshly cracked black pepper, to taste

Method
 

Preparation
  1. Cut the chicken into bite-sized pieces, then season lightly with salt and black pepper.
Cooking
  1. Warm the olive oil in a large soup pot over medium heat. Add the onion, carrots, and celery, and cook for about 5 minutes, until softened.
  2. Add the garlic and cook for 1 minute, stirring until fragrant.
  3. Pour in the chicken broth and add the chicken, thyme, and bay leaves.
  4. Bring the soup to a boil, then lower the heat and simmer gently for 20 minutes, until the chicken is fully cooked and reaches 165°F (74°C).
  5. Add the cheese tortellini and cook according to the package directions until tender.
Finishing
  1. Discard the bay leaves. Stir in the parsley, then adjust the seasoning with salt and black pepper.
  2. Serve the chicken tortellini soup warm.

Notes

When making the soup ahead, keep the tortellini separate from the soup base to help preserve its texture.
