Preparation
- Cut the chicken into bite-sized pieces, then season lightly with salt and black pepper.
Cooking
- Warm the olive oil in a large soup pot over medium heat. Add the onion, carrots, and celery, and cook for about 5 minutes, until softened.
- Add the garlic and cook for 1 minute, stirring until fragrant.
- Pour in the chicken broth and add the chicken, thyme, and bay leaves.
- Bring the soup to a boil, then lower the heat and simmer gently for 20 minutes, until the chicken is fully cooked and reaches 165°F (74°C).
- Add the cheese tortellini and cook according to the package directions until tender.
Finishing
- Discard the bay leaves. Stir in the parsley, then adjust the seasoning with salt and black pepper.
- Serve the chicken tortellini soup warm.
Notes
When making the soup ahead, keep the tortellini separate from the soup base to help preserve its texture.
