Cooking
- Melt the unsalted butter in a large skillet over medium heat. Add the minced garlic and cook for about 1 minute, keeping it from browning.
- Add the coconut milk to the skillet and whisk in the curry powder, paprika, and onion powder until the sauce is evenly combined.
- Place the seasoned salmon fillets into the coconut curry sauce, lower the heat slightly, and bring the sauce to a gentle simmer.
- Loosely cover the skillet and simmer the salmon for 10–15 minutes, until it flakes easily with a fork.
- Add optional spinach or vegetables during the final few minutes of cooking, if using.
- Stir the lime juice into the sauce, then serve the coconut curry salmon over jasmine rice or with warm naan.
Serving
- Finish with fresh cilantro, lime wedges, and chili flakes if desired.
