Ingredients
  

Salmon
  • 4 salmon fillets (6 oz / 170 g each)
  • Salt and black pepper, to taste
Coconut Curry Sauce
  • 2 tablespoons unsalted butter
  • 2 tablespoons minced garlic
  • 1 can (13.5 oz / 383 g) full-fat coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 tablespoon lime juice
Optional Additions and Serving
  • Spinach, mushrooms, peas, bell peppers, or chili flakes (optional)
  • Jasmine rice, warm naan, fresh cilantro, and lime wedges for serving

Preparation
  1. Pat the salmon fillets dry with paper towels, then season both sides with salt and black pepper.
Cooking
  1. Melt the unsalted butter in a large skillet over medium heat. Add the minced garlic and cook for about 1 minute, keeping it from browning.
  2. Add the coconut milk to the skillet and whisk in the curry powder, paprika, and onion powder until the sauce is evenly combined.
  3. Place the seasoned salmon fillets into the coconut curry sauce, lower the heat slightly, and bring the sauce to a gentle simmer.
  4. Loosely cover the skillet and simmer the salmon for 10–15 minutes, until it flakes easily with a fork.
  5. Add optional spinach or vegetables during the final few minutes of cooking, if using.
  6. Stir the lime juice into the sauce, then serve the coconut curry salmon over jasmine rice or with warm naan.
Serving
  1. Finish with fresh cilantro, lime wedges, and chili flakes if desired.

Keep the sauce at a gentle simmer instead of boiling to help preserve the salmon's tender texture and maintain the coconut sauce consistency.
