Preparation
- Bring a large pot of salted water to a boil and cook the gnocchi according to the package directions until they float, then drain.
- Reserve a small amount of gnocchi cooking water to loosen the sauce if needed.
Cooking
- Warm olive oil in a large skillet over medium heat, add minced garlic, and cook until fragrant.
- Add fresh spinach to the skillet and cook until wilted.
- Stir heavy cream into the skillet with the spinach and garlic, then bring the mixture to a gentle simmer.
- Add crumbled feta cheese to the cream sauce and stir until softened and partially melted.
- Add the cooked gnocchi to the skillet and toss gently to coat with the creamy feta sauce.
- Continue cooking the gnocchi and sauce together for 2–3 minutes until the sauce thickens slightly.
Serving
- Serve the gnocchi hot with Parmesan cheese and black pepper if desired.
Notes
