Gnocchi and Sauce
  • 1 package gnocchi
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
Serving
  • Parmesan cheese for serving (optional)

Method
 

Preparation
  1. Bring a large pot of salted water to a boil and cook the gnocchi according to the package directions until they float, then drain.
  2. Reserve a small amount of gnocchi cooking water to loosen the sauce if needed.
Cooking
  1. Warm olive oil in a large skillet over medium heat, add minced garlic, and cook until fragrant.
  2. Add fresh spinach to the skillet and cook until wilted.
  3. Stir heavy cream into the skillet with the spinach and garlic, then bring the mixture to a gentle simmer.
  4. Add crumbled feta cheese to the cream sauce and stir until softened and partially melted.
  5. Add the cooked gnocchi to the skillet and toss gently to coat with the creamy feta sauce.
  6. Continue cooking the gnocchi and sauce together for 2–3 minutes until the sauce thickens slightly.
Serving
  1. Serve the gnocchi hot with Parmesan cheese and black pepper if desired.

Notes

Reserve a small amount of gnocchi cooking water to adjust the sauce to a smoother consistency if needed.
