Preparation
- Pat the chicken cutlets dry, then season both sides with salt and black pepper.
Cooking
- Warm olive oil in a large skillet over medium heat and cook the chicken cutlets for 5–7 minutes per side until browned and the internal temperature reaches 165°F / 74°C.
- Move the chicken to a plate and lower the skillet heat slightly.
- Cook the minced garlic in the skillet for about 30 seconds until aromatic.
- Add the chopped sun-dried tomatoes and sauté for 1–2 minutes.
- Pour in the heavy cream and stir while loosening the browned bits from the skillet base to incorporate them into the sauce.
- Add the fresh spinach and mix until the leaves wilt into the cream sauce.
- Place the chicken and any collected juices back into the skillet, then simmer gently for 1–2 minutes until the chicken is covered with sauce.
Serving
- Finish with grated Parmesan cheese if desired and serve hot.
Notes
Use a gentle simmer after adding the cream to help maintain a smooth sauce.
