Preparation
- Dry the salmon fillets with paper towels, then season both sides with salt and pepper.
Cooking
- Warm 2 tablespoons butter in a large skillet over medium heat.
- Place the salmon fillets in the skillet with the skin side facing down and cook for 5–6 minutes, until the edges are golden and crisp.
- Carefully turn the salmon and cook for another 4–5 minutes, until it flakes easily and reaches an internal temperature of 145°F / 63°C, then transfer the fillets out of the skillet.
- Cook the minced garlic in the same skillet for about 30 seconds until fragrant.
- Add the halved cherry tomatoes and cook until they soften.
- Mix in the fresh spinach and chopped basil, cooking until the spinach wilts.
- Lower the heat slightly, add the heavy cream, and stir in the Parmesan cheese.
- Continue cooking the sauce gently until it thickens and becomes creamy.
- Place the salmon back into the skillet, coat it with the garlic Parmesan sauce, and simmer for 1 minute before serving.
Notes
For the smoothest sauce texture, add Parmesan gradually and avoid bringing the cream sauce to a boil.
