Ingredients
  

Crispy Chilli Beef
  • 300g lean beef mince
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 3 garlic cloves, minced
Sticky Spicy Sauce
  • 20ml dark soy sauce
  • 15ml sriracha
  • 10g tomato puree
  • 20g honey
Rice
  • 250g cooked rice
Toppings and Serving
  • Sliced spring onions, for topping (optional)
  • Sesame seeds, for topping (optional)
  • Chilli flakes, for topping (optional)
  • Fresh cilantro, for topping (optional)
  • Lime wedges, for serving (optional)

Method
 

Preparation
  1. Chop the onion, bell pepper, and garlic.
  2. Combine the dark soy sauce, sriracha, tomato puree, honey, and a small splash of water in a bowl and whisk until blended.
Cooking
  1. Warm a large skillet over medium heat and cook the onion and bell pepper for several minutes until softened.
  2. Add the minced garlic and cook briefly until aromatic.
  3. Add the beef mince and cook while breaking it apart, continuing until the excess liquid has evaporated and the beef develops crispy browned edges.
  4. Pour the prepared sauce into the skillet with the beef and stir until evenly coated and slightly thickened.
  5. Add the cooked rice and stir until fully combined with the beef mixture and heated through.
Serving
  1. Serve the crispy chilli beef rice with spring onions, sesame seeds, chilli flakes, cilantro, or lime wedges as desired.

Notes

Use cold cooked rice for the best texture and to help keep the rice from becoming soft.
