  • 2 large heads broccoli, cut into florets
  • Olive oil spray
Seasoning
  • 1/2 cup cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
Greek Yogurt Dip
  • 1 cup plain Greek yogurt
  • 1 tablespoon lemon juice

Method

Preparation
  1. Bring a pot of salted water to a boil and cook the broccoli florets for 3 to 5 minutes until slightly tender.
  2. Drain the broccoli well and dry the florets completely with paper towels.
  3. Place the broccoli florets on a parchment-lined baking sheet.
  4. Press each floret flat using the bottom of a glass or measuring cup, keeping the pieces intact.
Seasoning
  1. Combine cornstarch, garlic powder, onion powder, sea salt, and black pepper in a small bowl.
  2. Coat the flattened broccoli florets with the seasoning mixture, then lightly spray them with olive oil.
Baking
  1. Bake the seasoned broccoli at 400°F / 205°C for 20 to 25 minutes, turning halfway through, until the edges become crisp and golden.
Serving
  1. Mix the Greek yogurt with lemon juice to prepare the dip, then serve it alongside the warm broccoli chips.

Notes

Dry the broccoli thoroughly before applying the coating to help create a crisp texture.
