Chicken Coating
  • 4 large boneless skinless chicken breasts
  • 2 cups all-purpose flour
  • 4 tsp salt
  • 4 tsp black pepper
  • 3 tbsp ground ginger
  • 1 tbsp freshly ground nutmeg
  • 2 tsp ground thyme
  • 2 tsp ground sage
  • 1 tsp cayenne pepper
  • 2 tbsp paprika
Egg Wash
  • 4 large eggs
  • 8 tbsp water
Frying
  • Canola oil for frying
Honey Garlic Sauce
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup honey
  • 1/4 cup low-sodium soy sauce

Method

Preparation
  1. Place the chicken breasts between sheets of plastic wrap or parchment paper and pound them evenly until they are about 1/2-inch thick.
  2. Mix the flour, salt, black pepper, ground ginger, nutmeg, thyme, sage, cayenne pepper, and paprika in a large bowl, then split the seasoned flour between two shallow dishes.
  3. Whisk the eggs and water together in a separate bowl until combined.
  4. Coat each chicken breast in the first flour dish, dip into the egg mixture, then press into the second flour dish to create a double coating.
  5. Allow the coated chicken breasts to rest for 5 minutes before frying.
Cooking
  1. Heat canola oil in a large skillet over medium heat and fry the chicken breasts for 4 to 5 minutes per side until golden and the internal temperature reaches 165°F / 74°C.
  2. Move the fried chicken to a wire rack to help preserve the crisp coating.
Sauce
  1. Warm olive oil in a small saucepan, cook the minced garlic for about 30 seconds until fragrant, then mix in the honey and low-sodium soy sauce.
  2. Simmer the honey garlic sauce gently for 5 minutes until it becomes slightly thickened.
Serving
  1. Drizzle the warm honey garlic sauce over the crispy chicken breasts immediately before serving.

Notes

Add the glaze immediately before serving to help maintain the crispy coating.
