Preparation
- Place the chicken breasts between sheets of plastic wrap or parchment paper and pound them evenly until they are about 1/2-inch thick.
- Mix the flour, salt, black pepper, ground ginger, nutmeg, thyme, sage, cayenne pepper, and paprika in a large bowl, then split the seasoned flour between two shallow dishes.
- Whisk the eggs and water together in a separate bowl until combined.
- Coat each chicken breast in the first flour dish, dip into the egg mixture, then press into the second flour dish to create a double coating.
- Allow the coated chicken breasts to rest for 5 minutes before frying.
Cooking
- Heat canola oil in a large skillet over medium heat and fry the chicken breasts for 4 to 5 minutes per side until golden and the internal temperature reaches 165°F / 74°C.
- Move the fried chicken to a wire rack to help preserve the crisp coating.
Sauce
- Warm olive oil in a small saucepan, cook the minced garlic for about 30 seconds until fragrant, then mix in the honey and low-sodium soy sauce.
- Simmer the honey garlic sauce gently for 5 minutes until it becomes slightly thickened.
Serving
- Drizzle the warm honey garlic sauce over the crispy chicken breasts immediately before serving.
Notes
Add the glaze immediately before serving to help maintain the crispy coating.
