Ingredients
  

Wet ingredients
  • 1 cup unsalted butter, softened
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 tablespoons milk, plus more if needed
Dry ingredients
  • 2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon espresso powder (optional)
Mix-ins and garnish
  • 2 cups semi-sweet chocolate chips, divided
  • Flaky sea salt for garnish (optional)

Method
 

Preparation
  1. Beat the softened butter with white sugar and brown sugar in a large bowl until the mixture is light and fluffy.
  2. Add the eggs one at a time, then mix in the vanilla extract until fully combined.
  3. In a separate bowl, whisk together the flour, cocoa powder, baking soda, salt, and espresso powder.
  4. Gradually mix the dry ingredients into the butter mixture, then add the milk and 1 1/2 cups of chocolate chips, stirring until the dough just comes together.
  5. Cover the dough and refrigerate for at least 3 hours or overnight.
Baking
  1. Preheat the oven to 350°F / 175°C and prepare baking sheets with parchment paper.
  2. Scoop the chilled dough onto the lined baking sheets, spacing the portions apart.
  3. Place the remaining 1/2 cup of chocolate chips on top of the dough portions and add flaky sea salt if using.
  4. Bake for 12–15 minutes, until the edges are set while the centers stay soft.
  5. Let the cookies cool on the baking sheets for 5 minutes, then move them to a wire rack to finish cooling.

Notes

Chilling the dough helps reduce spreading and creates thicker cookies with softer centers.
