Chicken
  • 4 boneless, skinless chicken breasts
Marinade
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 teaspoon dried herbs (thyme, rosemary, oregano, or parsley)
  • Salt, to taste
  • Black pepper, to taste
Garnish
  • Fresh herbs for garnish (optional)

Method
 

Preparation
  1. Blot the chicken breasts dry with paper towels to remove excess moisture.
  2. Combine olive oil, minced garlic, lemon juice, dried herbs, salt, and black pepper in a small bowl and whisk to create the seasoning mixture.
  3. Coat both sides of each chicken breast evenly with the garlic lemon herb mixture.
Cooking
  1. For baking, arrange the chicken breasts in a lightly greased baking dish and bake at 375°F / 190°C for 25–30 minutes, until the internal temperature reaches 165°F / 74°C.
  2. For pan-searing or grilling, cook the chicken breasts for 6–7 minutes per side until browned and cooked through to the same internal temperature.
  3. Allow the cooked chicken breasts to rest for 5 minutes before slicing.
  4. Finish the sliced chicken breasts with fresh herbs and serve with lemon wedges if desired.

Notes

For more even cooking, slightly pound thicker chicken breasts before seasoning.
