Ingredients
  

  • 2 cups cooked rice
  • 2 large eggs
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 green onions, chopped
  • Salt and pepper to taste

  1. Warm the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the mixed vegetables and stir-fry for 2–3 minutes until they are tender-crisp.
  3. Move the vegetables aside in the skillet, add the beaten eggs, and scramble them until fully set.
  4. Add the cooked rice and mix it with the vegetables and eggs until everything is evenly combined.
  5. Drizzle the soy sauce over the rice mixture and toss until the rice is coated throughout.
  6. Season the fried rice with salt and pepper to taste.
  7. Fold in the chopped green onions and serve hot.

Notes

For the best fried rice texture, use cold cooked rice whenever possible.
