Ingredients
  

Pan Sauce
  • 2 boneless, skinless chicken breasts
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, crushed
  • 2 to 3 sprigs fresh thyme or rosemary
  • 1/2 cup chicken broth or dry white wine
  • 1 tablespoon lemon juice
Herb Sauce
  • 2 tablespoons finely chopped fresh parsley
  • 1 tablespoon finely chopped fresh basil or cilantro
  • 1 tablespoon olive oil
  • 1 small garlic clove, minced
  • 1 teaspoon lemon juice or vinegar

Method
 

Preparation
  1. Dry the chicken breasts thoroughly, then season both sides with salt and black pepper.
Cooking
  1. Heat the butter in a large skillet over medium heat until melted and foamy.
  2. Add the chicken breasts and sear for 2 to 3 minutes on each side, until lightly golden.
  3. Lower the heat to medium-low and arrange the crushed garlic and thyme or rosemary around the chicken.
  4. Add the chicken broth or dry white wine, cover the skillet, and simmer gently for 10 to 12 minutes. Occasionally spoon the pan liquid over the chicken and cook until the thickest part reaches 165°F / 74°C.
  5. Move the chicken to a plate, cover it loosely with foil, and let it rest for 5 minutes.
Herb Sauce
  1. Combine the parsley, basil or cilantro, olive oil, minced garlic, and 1 teaspoon lemon juice or vinegar.
Serving
  1. Mix 1 tablespoon lemon juice into the skillet sauce, then spoon the pan sauce and herb sauce over the rested chicken.

Notes

Choose chicken breasts with similar thickness for even cooking, and maintain a gentle simmer to help keep the meat from drying out.
