  • 2 boneless skinless chicken breasts
Creamy Mushroom Sauce
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 8 oz / 225 g mushrooms, sliced
  • 1 cup heavy cream
  • Salt, to taste
  • Black pepper, to taste
Garnish
  • Fresh parsley for garnish

Method
 

Preparation
  1. Dry the chicken breasts with paper towels, season with salt and pepper, and warm the olive oil in a skillet over medium heat.
Cooking
  1. Place the chicken breasts in the skillet and cook until browned and fully cooked, reaching an internal temperature of 165°F / 74°C, then transfer the chicken out of the pan.
  2. Cook the minced garlic in the same skillet until aromatic, taking care to avoid browning or burning it.
  3. Add the sliced mushrooms and cook until they are tender, browned, and have released their moisture.
  4. Reduce the heat, pour in the heavy cream, and gently simmer until the sauce becomes thicker while staying smooth.
  5. Put the cooked chicken breasts back into the skillet and cover them with the creamy mushroom sauce.
Serving
  1. Allow the chicken to rest briefly, finish with fresh parsley, and serve warm.

Notes

For the best texture, avoid bringing the cream sauce to a boil and cook the mushrooms until their moisture has released before adding the cream.
