Preparation
- Dry the chicken breasts with paper towels, season with salt and pepper, and warm the olive oil in a skillet over medium heat.
Cooking
- Place the chicken breasts in the skillet and cook until browned and fully cooked, reaching an internal temperature of 165°F / 74°C, then transfer the chicken out of the pan.
- Cook the minced garlic in the same skillet until aromatic, taking care to avoid browning or burning it.
- Add the sliced mushrooms and cook until they are tender, browned, and have released their moisture.
- Reduce the heat, pour in the heavy cream, and gently simmer until the sauce becomes thicker while staying smooth.
- Put the cooked chicken breasts back into the skillet and cover them with the creamy mushroom sauce.
Serving
- Allow the chicken to rest briefly, finish with fresh parsley, and serve warm.
Notes
For the best texture, avoid bringing the cream sauce to a boil and cook the mushrooms until their moisture has released before adding the cream.
