Preparation
- Heat the oven to 350°F (175°C). Prepare a 12-cup muffin pan with paper liners or a light coating of grease.
- Combine pumpkin puree, Greek yogurt, honey or maple syrup, eggs, and vanilla extract in a large bowl and whisk until evenly blended.
- In a separate bowl, mix the whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Add the dry mixture gradually to the pumpkin mixture, folding gently just until the batter comes together.
- Mix in walnuts or chocolate chips if using.
- Portion the batter into the muffin cups, filling each cup about two-thirds full.
Baking
- Bake for 20 to 25 minutes, until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the pan for a few minutes, then move them to a wire rack to cool completely.
Notes
Use pure pumpkin puree instead of pumpkin pie filling to maintain the intended moisture and spice balance.
