  • 1 cup fresh parsley leaves
  • 2 cups fresh spinach
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

  1. Warm the olive oil in a large pot over medium heat, then cook the minced garlic for about 1 minute until fragrant, keeping it from browning.
  2. Add the basil leaves, parsley leaves, and spinach to the pot and cook for 2–3 minutes until the greens soften.
  3. Stir in the vegetable broth and bring the mixture to a gentle simmer for about 5 minutes.
  4. Blend the warm soup using an immersion blender or carefully process it in batches until the texture is completely smooth.
  5. Place the blended soup back over low heat and mix in the coconut milk, warming it gently without bringing it to a boil.
  6. Season the soup with salt and pepper to taste before serving.

Notes

For the smoothest texture, blend the soup while it is still warm and avoid boiling it after adding the coconut milk.
