Ingredients

Filling
  • 1 pound ground beef (454 g)
  • 1 packet taco seasoning
  • 2 cups cooked white rice
Sauce and Cheese
  • 1 cup nacho cheese sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
Assembly and Cooking
  • 1 cup sour cream
  • 1 tablespoon chipotle sauce
  • 4 large flour tortillas
  • 2 tablespoons butter or oil

Method

Cooking
  1. Warm a large skillet over medium heat, add the ground beef, and cook until browned and fully done. Drain any excess grease if necessary.
  2. Stir the taco seasoning and cooked white rice into the beef, mixing until the filling is evenly seasoned and heated throughout.
Assembly
  1. Place the flour tortillas on a flat surface and spread sour cream along the center of each one.
  2. Evenly portion the beef and rice mixture onto the tortillas, then add nacho cheese sauce, cheddar cheese, and mozzarella cheese over the filling.
  3. Bring the tortilla sides inward and roll each one into a tight burrito, keeping the seam underneath.
Grilling and Serving
  1. Heat butter or oil in a skillet over medium heat. Place the burritos seam-side down and cook until crispy and browned on all sides.
  2. Cut the grilled burritos in half and serve while the cheese filling is warm and melted.

Notes

Warm the tortillas slightly before rolling to make them easier to handle and help prevent cracking. Avoid overfilling the burritos so they remain sealed while grilling.
