Ingredients
  

  • 5 vegetable gyozas
  • 2 spring onions
  • ½–1 pak choi
  • 20g fresh ginger
  • 1 garlic clove
  • ½ courgette
  • 500ml vegetable stock
  • 1 tablespoon soy sauce
  • 1 tablespoon chilli oil
  • Salt, to taste
  • Black pepper, to taste

Method
 

Cooking
  1. Warm the chilli oil in a saucepan over low heat.
  2. Add the spring onions, garlic, and fresh ginger to the saucepan and cook until aromatic.
  3. Pour in the vegetable stock and add the soy sauce, pak choi, courgette, and vegetable gyozas.
  4. Cover the saucepan and gently simmer the soup until the vegetables are tender and the gyozas are fully cooked.
  5. Season the soup with salt and black pepper to taste.
Serving
  1. Serve the gyoza soup hot and garnish with spring onions or chili flakes if desired.

Notes

Use gentle simmering rather than boiling to help keep the gyozas intact.
