Ingredients
  

Soup Base
  • 3 tablespoons olive oil
  • 1 large onion, chopped
  • 5 garlic cloves, minced
  • 1 large carrot, diced
  • 5 cremini mushrooms, chopped
  • 6 cups vegetable broth
Grains and Seasonings
  • 1/2 cup quinoa
  • 1/8 teaspoon turmeric
  • Salt, to taste
  • Black pepper, to taste
  • Crushed red pepper flakes
Greens and Garnish
  • 1/4 cup fresh coriander
  • 1 cup shredded kale
  • 3 additional garlic cloves, minced

Method
 

Preparation
  1. Heat olive oil in a large soup pot, then cook the chopped onion until it softens.
  2. Stir in 5 minced garlic cloves and cook briefly until fragrant.
  3. Add the diced carrot and chopped cremini mushrooms, then cook until the vegetables start to soften.
Cooking
  1. Add vegetable broth, quinoa, and turmeric to the pot, then stir to combine.
  2. Bring the soup to a gentle simmer and cook until the quinoa becomes tender.
  3. Mix in shredded kale, the remaining 3 minced garlic cloves, fresh coriander, salt, black pepper, and crushed red pepper flakes, then cook for several more minutes before serving.

Notes

Rinse quinoa before cooking to help reduce bitterness, and add kale near the end of cooking to help maintain its texture.
