Ingredients
  

Marinade
  • 3 tablespoons low-sodium soy sauce or tamari
  • 2 tablespoons honey
  • 2 tablespoons sriracha
  • 2 teaspoons minced garlic
  • 3 tablespoons water
Bowls
  • 2 cups cooked white rice
  • 1 avocado, diced
  • 1 cucumber, sliced
  • 1 cup cooked edamame
Toppings
  • ½ cup sriracha mayo
  • Sesame seeds (optional)
  • Red pepper flakes (optional)
  • 4 (4–6 oz / 170 g) salmon fillets

Method
 

Preparation
  1. Cut the salmon fillets into cubes and remove the skin if preferred.
  2. Combine soy sauce, honey, sriracha, minced garlic, and water in a bowl, whisking until the marinade is blended.
  3. Place the salmon cubes in the marinade and refrigerate for 20 minutes.
Cooking
  1. Warm a lightly oiled skillet over medium-high heat and cook the marinated salmon cubes for 2–3 minutes per side until golden and flaky.
  2. Add the remaining marinade to the skillet and simmer until it reduces into a thick, glossy glaze.
Assembly
  1. Build the bowls with cooked white rice, glazed salmon, diced avocado, sliced cucumber, and cooked edamame.
  2. Finish with a drizzle of sriracha mayo and sprinkle with sesame seeds before serving.

Notes

Keep the avocado separate from leftovers and add it fresh when serving to maintain the best texture.
