Preparation
- Combine the chicken pieces with Jamaican curry powder, salt, black pepper, and 1 tablespoon oil in a bowl, coating the chicken evenly. Allow the chicken to marinate for at least 30 minutes.
Cooking
- Warm 1 tablespoon oil in a large pot or deep skillet over medium heat. Add the chopped onion and minced garlic and cook until softened and aromatic.
- Add the marinated chicken to the pot and cook until the pieces are lightly browned on all sides.
- Stir in the chicken stock, coconut milk, fresh thyme, and chopped hot peppers. Bring the mixture to a gentle simmer.
- Cover the pot and simmer for 30–40 minutes, cooking until the chicken is tender and the curry sauce has thickened.
- Taste the curry and season with additional salt and pepper as needed. Serve the curry chicken hot with rice, roti, or vegetables.
