Ingredients
  

Muffins
  • 1 tablespoon avocado oil, for greasing
  • 4 large eggs
  • 1/2 cup pumpkin puree
  • 4 tablespoons unsalted butter, melted and cooled
  • 1 teaspoon stevia glycerite
  • 2 teaspoons vanilla extract
  • 2 teaspoons ground cinnamon
  • 6 tablespoons coconut flour
  • 1 teaspoon baking powder
Cream Cheese Topping
  • 8 oz / 225 g (227 grams) cream cheese, softened
  • 1/4 cup pumpkin puree
  • 1 teaspoon stevia glycerite
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract

Method
 

Preparation
  1. Heat the oven to 350°F / 175°C and grease a muffin pan or prepare it with muffin liners.
  2. Whisk together the eggs, 1/2 cup pumpkin puree, melted cooled butter, stevia glycerite, 2 teaspoons vanilla extract, and 2 teaspoons cinnamon until the mixture is smooth.
  3. Stir the coconut flour and baking powder into the batter until fully incorporated and thickened.
  4. In a separate bowl, combine the softened cream cheese, 1/4 cup pumpkin puree, stevia glycerite, 1/2 teaspoon cinnamon, and 1/2 teaspoon vanilla extract until creamy.
Baking
  1. Divide the pumpkin batter among the muffin liners, filling each one about three-quarters full.
  2. Place a spoonful of the cream cheese mixture on top of each muffin.
  3. Bake for about 20 minutes, until the muffin portion is set and a toothpick inserted into the muffin comes out mostly clean.
  4. Allow the muffins to cool slightly before serving.

Notes

Use pure pumpkin puree rather than pumpkin pie filling to achieve the correct texture and sweetness.
