Preparation
- Heat the oven to 350°F / 175°C and grease a muffin pan or prepare it with muffin liners.
- Whisk together the eggs, 1/2 cup pumpkin puree, melted cooled butter, stevia glycerite, 2 teaspoons vanilla extract, and 2 teaspoons cinnamon until the mixture is smooth.
- Stir the coconut flour and baking powder into the batter until fully incorporated and thickened.
- In a separate bowl, combine the softened cream cheese, 1/4 cup pumpkin puree, stevia glycerite, 1/2 teaspoon cinnamon, and 1/2 teaspoon vanilla extract until creamy.
Baking
- Divide the pumpkin batter among the muffin liners, filling each one about three-quarters full.
- Place a spoonful of the cream cheese mixture on top of each muffin.
- Bake for about 20 minutes, until the muffin portion is set and a toothpick inserted into the muffin comes out mostly clean.
- Allow the muffins to cool slightly before serving.
Notes
Use pure pumpkin puree rather than pumpkin pie filling to achieve the correct texture and sweetness.
