Chicken
  • 4 boneless skinless chicken breasts
  • 1 teaspoon Italian seasoning
  • Salt, to taste
  • Black pepper, to taste
  • Olive oil for grilling
Cheese Topping
  • 1/2 cup ranch dressing
  • 1 cup shredded provolone cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced

Method
 

Preparation
  1. Flatten the chicken breasts to an even thickness with a meat mallet.
  2. Season both sides of the chicken breasts with salt, black pepper, and Italian seasoning.
Cooking
  1. Preheat a grill or grill pan over medium-high heat and lightly coat the cooking surface with olive oil.
  2. Grill the chicken breasts for 6–8 minutes per side until the internal temperature reaches 165°F / 74°C, then move the chicken away from direct heat.
  3. Mix the ranch dressing and minced garlic together in a small bowl until combined.
  4. Spread the ranch garlic mixture over the grilled chicken breasts.
  5. Add shredded provolone cheese and grated Parmesan cheese over each chicken breast.
  6. Cover the grill or place the chicken under the broiler for 2–3 minutes until the cheese is melted and golden brown.
  7. Allow the chicken to rest briefly before serving.
