Banana Bites
  • 2 large firm ripe bananas
  • 2-3 tablespoons natural creamy peanut butter
Chocolate Coating
  • 1/4 cup dark chocolate chips (70% cacao or higher)
  • 1 teaspoon coconut oil
Toppings
  • 2 tablespoons roasted unsalted peanuts, chopped
  • Sea salt flakes, optional
  • Mini pretzel pieces, optional
  • Shredded coconut, optional
  • Chopped dates, optional
  • Crushed granola, optional
  • Chia seeds, optional

Method
 

Preparation
  1. Line a baking sheet or tray with parchment paper. Peel the bananas and slice them into 1/2-inch thick rounds.
  2. Place the banana slices on the prepared tray and freeze for 15-20 minutes until firm.
  3. Spread a thin layer of peanut butter over each partially frozen banana slice.
  4. Add chopped peanuts and any optional toppings over the peanut butter layer.
Topping
  1. Melt the dark chocolate chips and coconut oil together using short microwave intervals, stirring between each interval until smooth.
  2. Coat the banana bites with the melted chocolate mixture by dipping or drizzling.
Chilling
  1. Place the coated banana bites back in the freezer for 30-60 minutes until the chocolate is set and the bites are fully frozen.
Serving
  1. Allow the frozen banana bites to sit at room temperature for a few minutes before serving.
