  • 2 cups cooked chicken, shredded
  • 1 cup cauliflower florets
  • 1 cup broccoli florets
  • 1 cup heavy cream
  • 1/2 cup cream cheese, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
Topping
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Preheat the oven to 350°F / 175°C.
  2. Cut the cauliflower and broccoli florets into evenly sized pieces.
  3. In a large bowl, combine shredded chicken, cauliflower florets, broccoli florets, heavy cream, softened cream cheese, garlic powder, onion powder, salt, and pepper.
  4. Stir the mixture until the creamy sauce evenly covers the chicken and vegetables.
  5. Spread the casserole mixture into a greased baking dish in an even layer.
Baking
  1. Sprinkle shredded cheese over the casserole and drizzle olive oil across the top.
  2. Bake for 25–30 minutes until the casserole is bubbling and the cheese topping is golden brown.
