Preparation
- Heat olive oil and butter in a large soup pot over medium heat. Add the diced onion, carrots, and celery, then cook for 5–6 minutes until the vegetables soften.
- Add garlic, dried thyme, dried oregano, black pepper, kosher salt, and red pepper flakes if using. Cook for about 30 seconds until fragrant.
Cooking
- Sprinkle flour over the vegetables and stir constantly for 1 minute. Gradually whisk in the chicken broth until the mixture is smooth.
- Add the sun-dried tomatoes and Parmesan rind. Bring the soup to a gentle simmer and cook for about 10 minutes.
- Lower the heat to medium-low and slowly mix in the heavy cream, keeping the soup from boiling after adding the dairy.
- Stir in the shredded chicken and baby spinach. Cook for 2–3 minutes until the chicken is warmed through and the spinach has wilted.
- Remove the Parmesan rind, then mix in the grated Parmesan and lemon juice. Adjust seasoning if needed.
Serving
- Ladle the soup into bowls and finish with fresh basil and additional Parmesan before serving.
Notes
Add the cream after lowering the heat and avoid boiling the soup after adding the dairy to help maintain a smooth broth.
