  • 4 white fish fillets (cod, haddock, snapper, halibut, or tilapia)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup olives, sliced
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano or thyme
  • Salt, to taste
  • Black pepper, to taste
Garnish and Optional Toppings
  • Fresh parsley or basil for garnish
  • Lemon wedges (optional)
  • Red pepper flakes (optional)
  • Capers (optional)
  • Crumbled feta cheese (optional)

Method
 

Preparation
  1. Preheat the oven to 400°F / 200°C.
  2. Pat the fish fillets dry, lightly coat a baking dish with olive oil, arrange the fish in a single layer, and season both sides with salt and black pepper.
  3. Mix the cherry tomatoes, sliced olives, minced garlic, olive oil, and dried oregano or thyme together in a bowl.
Baking
  1. Distribute the tomato and olive mixture over and around the fish fillets in the baking dish.
  2. Bake the fish for 20–25 minutes until the fillets are opaque, easily flake with a fork, and reach 145°F / 63°C internally.
Serving
  1. Remove the baked fish from the oven and finish with fresh parsley or basil, lemon wedges, and optional toppings before serving.

Notes

Use thicker fish fillets if desired, but adjust the baking time as needed to prevent overcooking.
