Ingredients
  

Shrimp and Corn
  • 1 lb (454 g) shrimp, peeled and deveined
  • 4 ears corn, kernels removed (about 3 cups)
  • 2 tbsp olive oil
  • Salt and black pepper, as needed
Creamy Feta Sauce
  • 1 cup feta cheese, crumbled
  • 1/2 cup sour cream
  • 2 tbsp mayonnaise
  • 1 tbsp fresh lime juice
  • 1 tsp chili powder
Garnish
  • Fresh cilantro, chopped for garnish

Method
 

Cooking
  1. Warm olive oil in a large skillet over medium-high heat.
  2. Arrange the shrimp in the skillet and cook for 3 to 4 minutes until pink, opaque, and cooked to 145°F / 63°C, then transfer the shrimp out of the pan.
  3. Add the corn kernels to the same skillet and cook undisturbed for 2 to 3 minutes to create a light char.
  4. Stir the corn and continue cooking for about 3 minutes until the kernels are lightly caramelized.
  5. Combine feta cheese, sour cream, mayonnaise, lime juice, chili powder, salt, and black pepper in a bowl, whisking until smooth.
  6. Place the shrimp back into the skillet with the charred corn and coat the mixture with the feta sauce.
  7. Warm the shrimp, corn, and sauce together over medium-low heat for 2 to 3 minutes until heated through, keeping the sauce from boiling.
  8. Finish with chopped cilantro and serve immediately.

Notes

Pat the shrimp and corn dry before cooking to help them sear and develop better flavor.
