  • 1 large egg
  • 1 ripe banana, mashed
  • 1/3 cup peanut butter or almond butter
  • 1/2 cup granulated sweetener
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp salt
Dry ingredients
  • 1 1/2 cups rolled oats
  • 1/3 cup almond flour
  • 1/3 cup protein powder
  • 1 tsp baking powder
  • 1/4 cup sugar-free chocolate chips

Method
 

Preparation
  1. Preheat oven to 400°F / 205°C and prepare a baking sheet with parchment paper.
  2. Combine the egg, mashed banana, and peanut butter or almond butter, mixing until smooth.
  3. Blend the granulated sweetener, vanilla extract, cinnamon, and salt into the banana mixture.
  4. Add the rolled oats, almond flour, protein powder, and baking powder, stirring until a thick cookie dough forms.
  5. Mix in the sugar-free chocolate chips, then refrigerate the dough for 10 minutes.
  6. Portion the chilled dough onto the prepared baking sheet and gently flatten each cookie.
Baking
  1. Bake the cookies for 10–12 minutes until the edges are lightly browned.
  2. Leave the cookies on the baking sheet for 5 minutes, then move them to a wire rack to cool completely.

Notes

Use a very ripe banana to add the best sweetness and moisture, and avoid baking the cookies too long to help maintain a soft texture.
