Cooking
- Warm olive oil in a large soup pot over medium heat, then cook the chopped onions and sliced leeks for 3–5 minutes until softened.
- Add the chopped mushrooms, garlic, salt, and black pepper, and cook for about 5 minutes until the mushrooms release their moisture and start to brown.
- Mix in the cubed potatoes, broth, optional white wine, thyme, parsley, marjoram, and lemon balm. Bring the soup to a gentle simmer.
- Cover the pot and simmer for 15–20 minutes until the potatoes are fork-tender and the vegetables have softened.
Finishing
- Remove the herb sprigs, then stir in the Parmesan cheese and heavy cream or plant-based cream until the soup is smooth and combined.
- Blend the soup with an immersion blender until creamy, or blend only part of it to leave some vegetable pieces for a rustic texture.
Serving
- Serve the soup hot with additional Parmesan cheese or fresh herbs if desired.
Notes
Adjust the final seasoning after adding Parmesan cheese because the cheese adds saltiness to the soup.
