Ingredients
  

Rice Mixture
  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/2 cup cream cheese, softened
  • 1/4 cup spicy mayo
Sushi Bake Filling
  • 1 pound salmon fillets, cooked and flaked
  • 1 cup imitation crab, chopped
Toppings and Serving
  • 1/4 cup green onions, chopped
  • 1 sheet nori, cut into strips
  • Soy sauce, for serving
  • Extra spicy mayo, for serving
  • Avocado slices, for serving
  • Sesame seeds, for serving
  • Seaweed snacks, for serving

Method
 

Preparation
  1. Rinse the sushi rice under cold water until the water is mostly clear, then cook it with 2 1/2 cups water following the package instructions.
  2. Mix the warm cooked sushi rice with softened cream cheese and 1/4 cup spicy mayo in a large bowl until the mixture is creamy and evenly blended.
  3. Preheat the oven to 350°F / 175°C and lightly grease a baking dish.
Assembly
  1. Spread the creamy rice mixture evenly across the bottom of the prepared baking dish.
  2. Arrange the cooked flaked salmon and chopped imitation crab in an even layer over the rice mixture.
Baking
  1. Bake the salmon sushi bake for 15–20 minutes until warmed through and lightly golden on top.
Serving
  1. Finish the baked sushi casserole with chopped green onions and nori strips, then serve warm with soy sauce, extra spicy mayo, avocado slices, sesame seeds, and seaweed snacks as desired.

Notes

Add avocado and nori after baking to help preserve their fresh texture.
