Chicken
  • 3–4 large boneless skinless chicken breasts
  • Salt and black pepper to taste
Mushroom Gravy
  • 2 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 can (10.5 oz / 298 g) cream of mushroom soup
  • 2 tablespoons low-sodium soy sauce

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and lightly grease a large baking dish.
  2. Pat the chicken breasts dry, then season both sides with salt and black pepper.
Baking
  1. Combine the cream of mushroom soup, chicken broth, minced garlic, and soy sauce in a bowl and whisk until the gravy mixture is smooth.
  2. Place the seasoned chicken breasts in the prepared baking dish and spread the mushroom gravy mixture evenly over them.
  3. Cover the dish tightly with foil and bake for 30 minutes.
  4. Remove the foil and bake for an additional 15–20 minutes, until the gravy has thickened and the chicken reaches an internal temperature of 165°F (74°C).
Serving
  1. Allow the chicken to rest for 5 minutes, then spoon the gravy over the chicken before serving.

Notes

Use chicken breasts that are similar in size to help them cook more evenly.
