Ingredients
  

Shortcake Dough
  • 1 1/2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • 1/2 cup (113 g) unsalted butter, cold and cubed
  • 1/2 cup milk
  • 1 teaspoon lemon zest
Strawberry Topping
  • 1 cup strawberries, sliced
  • 1/4 cup lemon juice
  • 2 tablespoons sugar
Serving
  • 1/2 cup whipped cream (optional)

Method
 

Preparation
  1. Heat the oven to 425°F / 220°C and prepare a baking sheet with parchment paper.
  2. Mix flour, 1/4 cup sugar, baking powder, and sea salt together in a large bowl.
  3. Work the cold cubed butter into the dry mixture until it forms coarse crumbs.
  4. Add milk and lemon zest, stirring just until the dough forms without overmixing.
Baking
  1. Move the dough to a lightly floured surface and gently shape it into a round about 1 inch thick.
  2. Cut the dough into rounds and arrange them on the lined baking sheet.
  3. Bake the shortcakes for 12–15 minutes until lightly golden.
Topping
  1. Combine sliced strawberries, lemon juice, and 2 tablespoons sugar in a bowl and allow the mixture to release its juices.
Assembly
  1. Slice the warm shortcakes in half, add the strawberry mixture between the layers, and finish with whipped cream if desired.
