  • ⅓ cup sugar
  • 2 teaspoons lemon juice
  • 1 teaspoon cornstarch

  1. Rinse the strawberries, remove the stems, and cut the berries into smaller pieces.
  2. Place the strawberries, sugar, and lemon juice in a medium saucepan, stirring to coat the fruit evenly.
Cooking
  1. Cook the strawberry mixture over medium heat, stirring often, until the berries release their juices and the mixture reaches a gentle bubble.
  2. Combine the cornstarch with a small amount of water to create a slurry, then mix it into the strawberry mixture.
  3. Simmer the sauce for 20–23 minutes, stirring regularly, until it has thickened slightly and does not stick to the pan.
  4. Take the saucepan off the heat and allow the strawberry sauce to cool to room temperature before serving; it will continue to thicken as it cools and chills.

Notes

For a smoother strawberry sauce, gently mash the berries while they simmer or blend the cooled sauce until it reaches a smooth consistency.
