Preparation
- Rinse the strawberries, remove the stems, and cut the berries into smaller pieces.
- Place the strawberries, sugar, and lemon juice in a medium saucepan, stirring to coat the fruit evenly.
Cooking
- Cook the strawberry mixture over medium heat, stirring often, until the berries release their juices and the mixture reaches a gentle bubble.
- Combine the cornstarch with a small amount of water to create a slurry, then mix it into the strawberry mixture.
- Simmer the sauce for 20–23 minutes, stirring regularly, until it has thickened slightly and does not stick to the pan.
- Take the saucepan off the heat and allow the strawberry sauce to cool to room temperature before serving; it will continue to thicken as it cools and chills.
Notes
For a smoother strawberry sauce, gently mash the berries while they simmer or blend the cooled sauce until it reaches a smooth consistency.
