Filling
- Beat the softened cream cheese with powdered sugar and vanilla extract in a large bowl until the mixture becomes smooth and creamy.
- Gently fold the whipped cream into the cream cheese mixture until the filling is light and fluffy.
Assembly
- Place the cooled sponge cake sheet flat on parchment paper or a rolling mat.
- Spread the strawberry preserves evenly across the surface of the sponge cake.
- Cover the preserves with the cream cheese filling, then distribute the diced strawberries evenly over the filling.
- Roll the sponge cake firmly from the short edge, using the parchment paper to help guide the roll and reduce cracking.
Chilling
- Refrigerate the rolled cake for 20–30 minutes until it is firm enough to slice neatly.
Serving
- Slice the chilled roll into 1-inch pieces with a sharp knife, wiping the blade clean between cuts as needed.
- Arrange the slices on a serving platter and finish with white chocolate drizzle, extra whipped cream, or mint leaves if desired.
