  • 1 sponge cake sheet (approximately 10×15 inches, homemade or store-bought)
Filling
  • 8 oz / 225 g (227 g) cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream
Strawberry Layer
  • 1 1/2 cups fresh strawberries, diced
  • 3 tablespoons strawberry preserves or jam
Garnish
  • Optional: white chocolate drizzle
  • Optional: extra whipped cream
  • Optional: mint leaves for garnish

Method
 

Filling
  1. Beat the softened cream cheese with powdered sugar and vanilla extract in a large bowl until the mixture becomes smooth and creamy.
  2. Gently fold the whipped cream into the cream cheese mixture until the filling is light and fluffy.
Assembly
  1. Place the cooled sponge cake sheet flat on parchment paper or a rolling mat.
  2. Spread the strawberry preserves evenly across the surface of the sponge cake.
  3. Cover the preserves with the cream cheese filling, then distribute the diced strawberries evenly over the filling.
  4. Roll the sponge cake firmly from the short edge, using the parchment paper to help guide the roll and reduce cracking.
Chilling
  1. Refrigerate the rolled cake for 20–30 minutes until it is firm enough to slice neatly.
Serving
  1. Slice the chilled roll into 1-inch pieces with a sharp knife, wiping the blade clean between cuts as needed.
  2. Arrange the slices on a serving platter and finish with white chocolate drizzle, extra whipped cream, or mint leaves if desired.
